Chocolate Ganache Without Cream. In a small saucepan heat up the butter and milk on medium heat. Once the butter is melted turn the heat to medium high.
Method: Take milk and butter in a sauce pan and heat it up. Bring mixture to a light boil and immediately remove and pour over chocolate. Whisk until the chocolate is melted and the ganache is smooth.
Stir the ganache until the cream and the chocolate are fully combined.
Place the dark chocolate in a medium sized bowl.
Break the chocolate up into small pieces in a heatproof bowl and pour the hot butter and milk mix over the chocolate. Make sure the bottom of the bowl is not touching the water. Lastly, add a tbsp of butter and a tsp of vanilla essence in the saucepan.
