Gradually add butter, beating until incorporated after each addition.
Lastly, add in the grated carrots and raisins and mix in until well combined.
Cool and finely chop the pecans. Add oil to the dry ingredients and mix well. Whisk together the flour, cinnamon, baking powder, baking soda and salt and set aside.
