Blueberry Coffee Cake Muffins. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Add the eggs, one at a time, beating between each addition.
Add the eggs, one at a time, beating between each addition. Using your fingers, mix until no lumps of brown sugar remain, then add the cold butter. When you take them out of the fridge stir in blueberries, or add after mixing the wet and dry ingredients if you don't have time to chill.
Place the remaining blueberries evenly on top of the muffins.
The muffins are done when a toothpick inserted into the center comes out clean.
Beat well, then hand mix in the blueberries. Take additional blueberries and place a few on top of each muffin, press gently into the dough so that the blueberries don't fall out. In a medium bowl, whisk together the flours, baking powder, lemon zest, salt, and nutmeg.
