Crab Cake Eggs Benedict. With a spoon, stir the water to form a whirlpool. One at a time, crack your egg and add it to the water.
When ready, gently form the crab cakes into uniform size and shape, pressing down slightly and smoothing the edges to form a flat, round circle. Add lime or lemon juice, salt, pepper and a pinch of cayenne and blend for just a few seconds. In a blender, combine everything except the butter.
Heat canola oil in a pan, then pan fry crab cakes until golden brown on each side.
